Artisanal Ricotta Gnocchi, crafted with meticulous attention to traditional technique. These cloud-like pillows of pasta are enveloped in an earthy porcini mushroom ragout and elevated with the complex notes of premium gorgonzola. The addition of crisp radicchio provides a pleasant counterpoint, while toasted walnuts contribute textural distinction. A finishing touch of gorgonzola blue cheese completes this refined composition of authentic Italian flavours.

METHOD

  • Add radicchio and mushrooms in a pan, add half a ladle of hot water and set aside. In the meantime warm the cheese sauce
  • Boil the gnocchi for 2 minutes then add to the pan with radicchio and mushrooms, add half a laidle of water and cook for another 2 minutes. Put the cheese sauce on a plate, add the gnocchi on top. Finish with walnut and balsamic
